Arabica

This high quality variety is grown in the high altitude region of Coorg, Karnataka and Yercaud, Tamil Nadu.

The beans are grown in trenches to allow for the plants to soak up all the monsoon water. As the water flows down the hills nourishing the surrounding vegetation and sits in the trenches feeding the Arabica coffee plants. Each bean produces a phenomenal tasting cup, with unique flavor profiles

Robusta

Variety is grown in the high altitude region of Coorg, Karnataka and Yercaud, Tamil Nadu. Cultivated on the hills above the trenches with Arabica plants alongside the same vegetation as the Arabica. Flavor profile is LOW in acidity and high in caffeine and antioxidants.

Monsoon Malabar

After harvest, the Arabica beans are exposed to monsoon rains and winds in the open, allowing the beans to increase its moisture content to about 10-11%. The PH level also becomes neutral and greatly reduces acidity. The color of the beans also becomes more whitish due to exposure to heavy rainfall. Grown in Yeracaud Tamil Nadu, and then transported to their warehouses in Mangalore during the monsoon season.

 

The processing begins with top grade beans, Arabica Cherry, that has already been processed. To equalize moisture absorption, the beans are raked frequently, followed by bulking and re-bagging at regular intervals. At the end of the monsoon season, this coffee is re-bulked, graded again, bagged and moved to a drier region for longer-term storage. In this 12-16 week process the beans absorb moisture in stages, swelling to nearly twice their original size and developing colors ranging from pale gold to light brown.  The end result is a special, unique flavor with low acidity.

 Grading/ Processing

 Primary: selective harvesting, fermentation process, and drying

The selective harvesting happens in plantation A for A grade coffee beans. The fermentation process is done by the washed or wet process where the are pulped from their skin and fermented in cement tanks flowed by the rinsing of beans with running water and the remaining mucilage is dried.

 This has been certified as A grade Arabica (plantation A) All grading is been done as per Indian Coffee board.
